INGREDIENTS

1.      Canned tuna packed in oil, undrained -1 can

2.      Cottage cheese -1/3 cup 

3.      Mayonnaise- 2 tablespoons 

4.      Finely chopped red onion- 1/4 cup 

5.      Celery  finely chopped – 1 stalk

6.      Lemon juice- 1 tablespoon 

7.      Fresh parsley, minced- 2 tablespoons 

8.      Dijon mustard- 1 teaspoon 

9.      Bread, lightly toasted - 2 slices 

10.  Lettuce, optional

11.  Sliced tomatoes, optional

 

1.   METHOD:




1.In a medium bowl, toss together the canned tuna, cottage cheese, mayonnaise, red onion, celery, lemon juice, parsley and Dijon mustard until combined.

2.Serve tuna salad on toast, either open faced, or between two slices of bread with lettuce and tomatoes, if you wish. For a low-carb option, serve on sliced lettuce.
